How to prepare it?
Recipe 1 Teff Super Booster: Mix ½ cup whole teff grain; ¾ cup probiotic yogurt (dairy or non-dairy). Stir thoroughly to ensure the tiny grains are completely coated and submerged. Ferment: Cover the bowl tightly with wrap or a lid and place it in the fridge for 24 hours. Serve: Stir 2 heaping tablespoons of cultured teff mixture into your morning oats, mix it into granola, spread it on toast, fold it into pasta, spoon it over a fruit crumble, or add it to your smoothie.
Recipe 2 Creamy Teff Porridge: Simmer ½ cup of Teff with 1½ cups of water or milk for 15-20 minutes; stir frequently until it reaches a polenta-like texture. Top with your favorite berries or nuts.
Recipe 3 Overnight Oats & Teff Porridge: Day Before: In a bowl, stir together ½ cup rolled oats, ½ cup whole teff grain, and ¾ cup + 1 tbsp milk (dairy or non-dairy). Cover and refrigerate for 24 hours. Next Day: Transfer the soaked mixture into a small pot. Add ½ cup + 1 tbsp water and a pinch of sea salt. Bring to a simmer over medium heat, stirring frequently—especially along the bottom—for about 6 minutes until thick and creamy. Rest & Serve: Remove from the heat, cover with a lid, and let it stand for 1 to 2 minutes to settle. Top with toasted seeds, fresh blueberries, and a drizzle of maple syrup.
For savory meals: Swap out white rice or other grains. Boil in bone broth and serve alongside roasted vegetables and protein.
Tip: Try dry-toasting teff in a saucepan over medium heat for 2 minutes until it smells fragrant and nutty. This will give any recipe a nuttier flavour profile in minutes
