What Makes This Bread Different

This loaf starts with wholegrain spelt, teff flour (naturally gluten free & high in protein), and whole teff grain: ancient, nutrient-dense, and naturally lower on the glycemic index than conventional wheat. That means slower digestion, steadier energy, and no blood sugar rollercoaster.

Then comes the seed blend— flax, chia, pumpkin, sunflower, sesame — woven through every slice for fibre, protein, healthy fats, and real texture. This is bread that earns its place on your table.

How to prepare it?

The night before:  Soak & Ferment (12–16 hours)

Combine the dry mix and the included yeast packet in a large bowl. Stir your vinegar and sweetener into 400 ml of lukewarm water (~95°F / 35°C), then pour over the dry mix. Stir well until a thick, porridge-like dough forms. Cover and leave at room temperature overnight (around 70°F / 20°C).

This is the moment to add any extras: additional seeds, chopped nuts, or whatever feels right.

The next morning: Mix & Bake

Your dough should be bubbly with a gentle fermented aroma. Add 2 tbsp of oil, then sprinkle the included psyllium husk packet over the dough and mix thoroughly until fully incorporated.

Transfer to your greased loaf pan and smooth the top. Cover loosely and let rise in a warm, draft-free spot for 45–60 minutes.

Preheat your oven to 400°F (204°C). Bake for 45–55 minutes until deep golden brown and the internal temperature reaches 200°F (93°C).

Before baking is a lovely moment to press herbs, olives, or dried fruit into the top.

Cool in the pan for 10–15 minutes, then transfer to a wire rack. Let it cool completely before slicing, this step matters for the texture.

400 ml lukewarm water

2 tbsp neutral oil (extra virgin olive oil works beautifully)

1 tbsp apple cider vinegar, lemon juice, or white vinegar

1–4 tbsp sweetener — maple syrup, honey, or blackstrap molasses (optional but recommended)

A greased 9x5-inch loaf pan (or 8.5x4.5-inch for a taller loaf)

What to expect?
